Mojito Green Smoothie

What’s are you to do when a sudden craving for the fresh taste of a cold mojito hits in the middle of breakfast? You don’t have to remind me that anything goes on the weekend, but Siri told me rum at 8 am wasn’t appropriate. I can’t imagine Alexa would be so harsh. Channeling my inner Jack Sparrow, minus the bad eyeliner, would have to wait, but I still needed some freshness to pep-start my morning.

Most every naturopath would agree that green smoothies, no matter how healthy, have tendencies to taste bland if you don’t amp them up a bit, and while there are 1,000 add-ins capable of bringing a “woo-hoo” to your drink, this one was good enough to bring to you! Throwing a ton of sweet mint in with tangy lime juice was exactly what brought life and flavor to this smoothie. Hey moms, it’s kid-approved!

Totally not a secret that spinach is amazing for you, but have you ever tried zucchini in your blend? Before you abandon, I promise it won’t be tasted, but you’ll still be getting all the benefits. Raise your hand if you’re all about those hidden nutrients.

Mojito Green Smoothie

  • 1/2 of a small, organic zucchini
  • 2 handfuls of organic spinach
  • 1/2 cup of unsweetened almond milk
  • 3-5 medjool dates, for sweetness
  • juice of 1 lime
  • 12-15 mint leaves, or a large handful

  1. Blend all ingredients in a blender until smooth.
  2. Garnish with fresh mint, a lime slice, and enjoy!

See? Way easier than you would think getting your raw greens in, without having to taste them. Sometimes salads just need to chill and let a fresh smoothie take the lead. Making this 100 more times this summer for a refreshing cool-down.
